Recipes

Parsley, Lemon, Dill Rice for 30

7 cups Brown Rice
¾ cup Fresh Dill and fresh Parsley
¾ cup Chopped Green Onions
1/3 cup Olive oil
1 tbsp Grated lemon rind
1/3 cup Lemon Juice

In large pot, prepare brown rice as per directions provided

Toss with dill, parsley, onions, oil, lemon rind and juice. Season with salt and pepper to taste

Salmon Salad for 30

10 cups Canned Salmon (assumes 1/3 cup serving per child)
½ cup Mayonnaise
½ cup Yogurt
1 cup Chopped peppers (red, green) Optional
Salt and Pepper to taste

Combine all ingredients
